Recipes For My Rocky Bottom Mushrooms

Thai chicken, oyster mushroom and coconut soup

Ingredients:
1 whole chicken roasted at 295 for 4 hours (pulled off bone save drippings/broth)
4-8 cups water
1 tsp salt, (pepper to taste)
lemongrass 1 stalk (crushed) or (I use lemongrass essential oil 2 drops) (leave intact in soup but you don't eat it it just takes a bath)
thai curry mix (I make my own blend listed below)
1/2 pound oyster mushrooms (sliced long 1/4 " wide) 
1 can coconut cream/milk
2 tablespoons coconut or olive oil (to stir fry vegetables)
1-2 garlic cloves crushed or garlic powder
1 head broccoli (cut into small bite sized pieces)
2-4 celery stalks chopped thin 
2 carrots (cut lengthwise then chopped into thin slices)
3 green onions chopped thin 
Directions:
after roasting the whole chicken, pull meat off bone then pour drippings and any liquid into a large pot. Add first 4 ingredients to broth and the coconut milk/cream. Bring soup to a boil lower to simmer. Stir fry rest of the ingredients in 2 tablespoons of coconut or olive oil  until they are glistening and a little bit tender and they have softened a bit but don't over cook. We want a little crunch to them. As you ladle up bowls add the stir fried vegetables to each bowl as you eat. makes 8-10 one cup servings.

 Pepperoni and Oyster Mushroom pizza

Ingredients:
~Pizza crust bought or homemade
~pizza sauce pre made
(or make your own: fresh tomatoes cooked down or tomato sauce from can or carton, add oregano, basil, salt and pepper, garlic powder to taste and tablespoon of olive oil)
~toppings: your choice
my version:
~1 large to medium head of broccoli cut into small bite size heads
~1 onion sliced thinly
~1/2 pound of oyster mushrooms sliced long and about same width as you sliced your onions.
~Feta cheese crumbles (to taste)
~parmesan cheese sprinkle or grated (to taste)
Directions:
Saute the mushrooms and vegetables quickly.  Cook crust as instructed if homemade or on package. Then build your pizza.  Add the sauce as thick as you like. Add pepperoni, the sauted vegtables and mushrooms, add feta cheese crumbles and some parmesan. bake until golden and yummy! Bake on 425 for about 10-15 minutes. 
note: the most important thing I have found, when I make a pizza with raw veggies like mushrooms and broccoli, is that when you take the time to quickly saute your veggies and oyster mushrooms, it insures they are evenly cooked and delicious for your pizza!
 

Savory Thyme and Oyster Mushroom Soup

Ingredients

6-8 cups chicken stock
1/2 -1 pound fresh oyster mushrooms or
4-8 ounces dried mushrooms (reconstitute in a bowl of water for 30 minutes before adding to broth)
1 medium to large sweet onion
1/4 cup red or white wine
1 1/2 tsp dried thyme
1 1/2 tsp garlic powder
4 tsp paprika
salt and pepper to taste
6 tablespoons of butter salted or unsalted
thickener: 4 tablespoons flour
potato starch or  1 tsp xanthem gum (for gluten-free folks)

Direction:

Chop fresh or reconstituted mushrooms and onion into bite sized pieces, then saute in pan with one table spoons of butter. Add this to the stock with all other ingredients. To thicken: Melt the other 5 tablespoons butter in saute pan over medium heat, add flour making a rue (butter flour paste) add cup of broth to pan stirring with a wisk or spoon to mix- when smooth add to soup stock. Take out 2 cups of broth with mushrooms, blend up until smooth add back into the soup. This last step makes this soup richer in flavor and a smooth, creamy texture. enjoy with crusty buttered bread! serves 8-10  1 cup servings.
